"Koicha" is a super thick freshly ground green matcha that is slightly bitter, but rich and earthy. There is a strictly ritualized way to drink matcha from a bowl like this. After the initial thick matcha is consumed, the coating on the bowl is rinsed with hot water for normal consistency matcha.
